1/4 cup light beer

1/4 cup unsweetened nondairy milk

2 tablespoon apple cider vinegar

1 tablespoon arrowroot flour

16 oz jar of Tennessee's Best Dill Pickles

  • Heat oil over medium high heat
  • Remove pickle chips form brine and lay on paper towel to dry.
  • In a small bowl mix beer, nondairy milk, apple cider vinegar, flax seed, arrowroot flour and 1/2 of all spices until all ingredients are thoroughly combined. Let sit for 5-10 minutes.
  • In a second bowl mix flour and remaining spices until all ingredients are thoroughly combined. Set dry and wet batter mixtures side by side to prepare dredging station.
  • Dip pickle chip in dry flour based mixture and shake off excess. Dip in wet beer mixture and then back in dry mixture again. Repeat with remaining pickle chips.
  • Carefully transfer 10 or 12 pickle chips at a time into hot oil making sure they don't stick together in beginning stages of frying. Fry for 90 seconds to 3 minutes or until golden brown. Apple Fritters

  • Whisk together the flour, baking powder, salt, and sugar in a medium sized bowl.

  • Slowly mix the wet mixture with the dry mixture until the mixture is completely moistened.  Gently stir in the diced apples.
  • Heat the canola oil to 375 F. Using a cookie scoop or a teaspoon, drop the batter into the hot oil. Use a slotted spoon to turn them after about a minute. Cook until golden brown. Make sure to regulate the heat to keep it at 375 F, this way the fritters will cook all of the way through.

Repeat with the rest of the batter. Sprinkle the warm fritters with powdered sugar. Make sure to enjoy them warm with a side of Tennessee's Best Apple Butter to dip them in.
